Next tour: Wednesday, August 4th, 5pm
The Rooftop Garden
Nowhere is Bastille’s commitment to community sustainability more evident than in our rooftop garden. Colin McCrate of Seattle Urban Farm Company oversees the operation, in conjunction with Shannon Galusha, our Executive Chef. Over 20 beds of produce are currently growing everything from deer’s tongue (small, tender greens) to meyer lemons.
We put our 45 tons of soil to good use – here’s a short list of what’s growing at the moment: arugula, basil, beets, breakfast radishes, California bay, deer’s tongue, kale, peppercress, red sails lettuce, romano beans, rosemary, surrey, tomatoes (Heirloom, Sun Golds, Cherokee Purples and Black Prince varieties) and honey . . . yes, honey!
The Bees
The rooftop is not only home to various greens and vegetables, but also to over 240,000 North American honey bees! Corky Luster of Ballard Bee Company harvests honey from the 6 hives in the garden. The bees collect nectar within a five-mile radius of their hive, and they especially love the blackberry bushes near the neighboring railroad tracks.
Their honey is destined for the Bastille dining room, just a few floors below the hives. Having the bees at Bastille is all part of the restaurant’s focus on using existing spaces in an innovative way to add true local flavor to the menu. Fear not! They are fairly docile and are far more interested in pollen-bearing plants than humans!
Garden Tours
Periodically, we offer tours of the Rooftop Garden lead by Colin and Shannon. The tours include a cocktail (or mocktail) crafted from rooftop ingredients by our chef de bar, Charles Veitch. $10. Please call 206.453.5014 to reserve a spot on the tour!
